2013 Protein Trends & Technologies Seminar
The 2013 Protein Trends & Technologies Seminar, held April 10, 2013 at the DoubleTree–Hilton Hotel, Arlington Heights, Illinois, USA, was a resounding success. The Protein Seminar reach maximum capacity registration a month before the event was held.
A sincere thank you goes to the 11 sponsors, 22 exhibitors, 8 speakers and 150 attendees (some who braved challenging travel conditions) to create an interactive, networking event that focused on must-have information for product developers involved in protein-enhanced foods and beverages. Indeed, registration closed a month early due to the maximum seating capacity having been reached. Topics included were as follows:
Consumer attitudes toward proteins and protein consumption and the benefits that they could provide
Marketplace dynamics including protein costs and sources, supply and demand, the global consumer
Emerging nutritional benefits such as weight management and “body shaping,” sarcopenia (muscle loss prevention with aging), cardiovascular health through hypertensive peptides, and athletic performance.
Claims and regulatory issues involving what can be said about nutrient content and health claims globally. What proteins are approved for use and at what levels.
Formulation functionality including the structuring properties that impact texture as well as taste properties. Gelling, suspension and stabilizing abilities in broad range of applications from baked goods to beverages and dairy products.
Emerging technologies on new forms and sources of proteins including advances in the production of protein ingredients.
