2020 Innovative Protein Products & Trends

A Protein Product Sampling Station of recently launched, creative foods, beverages and supplements will take place on May 20, 2020 during the 2020 Protein Trends & Technologies Seminar’s “Technical Program: Formulating with Protein.” If available, the following products will be offered for tasting.

Wella Bar

GFF COMMENTS: A new variety of Wella Bar, Cashew Cacao & Chaga, was launched in 2019. It has a number of “on-trend” characteristics such as the need for a refrigerated distribution chain (thus avoiding the need for emulsifiers), plant-based proteins and chaga mushrooms. Scramblers: The Original Omelet Bar™, Southwest Chicken Sausage

GFF COMMENTS: As of fall 2019, it was reported that Scramblers has one last hurdle and several challenges to face before beginning full-scale production. These are as follows:
• FINANCIAL: Capital needed for a tray mold to make custom trays to Scramblers™ bars specifications
• TRAY FABRICATION: Once funding is achieved, the trays must be fabricated, tested and production runs completed. The USDA, FDA, and process authority at its co-packer will need to sign off on the Scramblers™ product before the bars can be released. All ingredients and processes are within the known retort cooking guidelines, so no problem is anticipated.
• CO-PACKER PARTNERSHIP: The company notes “Our co-packer has been consistently committed to seeing our project to completion. Problems could arise but aren’t expected.”
• INGREDIENT SUPPLY: The Pasture Raised, Organic egg supply will depend on a specific partnership which, if it fails to be consummated, may result in having to source organic eggs, which, from a humaneness perspective, are still vastly superior to conventional or cage-free eggs.

The first production run is scheduled for the first week in November 2020, but obstacles related to formula revisions to accommodate flow through the equipment; production modifications and USDA labeling delays may postpone the startup date.
